Cream Cheese

I caught a nasty case of bronchitis and have been too under the weather to post for several days.

I did get milk at Lucky Layla Farms last weekend and made two cheeses with it. I have some pictures but it will take a couple of days to edit them and prepare a detailed post. Here is the last step from making one gallon of milk into cream cheese:

The milk is really rich and the “Cream Cheese” I made was fantastic! Technically what I made was Quark, which is made from milk only. Cream Cheese actually has cream and milk. This was so rich it could fool anyone into thinking it was cream cheese though. The slightly yellowish cast to the cheese is actually butter fat from the milk. I have fluorescent lighting in my kitchen and it tends toward a bluish light, so the yellow you see in the picture is from the cheese.

I also made my first Gruyere from three gallons of the milk but will age it for a few months before cutting into it. I will report back on that cheese when we do try it. It looks wonderful even now though.

I also bought their Campesino Cheese and Aged San Pedro Cheese.  Both are outstanding!
